I skipped dinner last night, and made a nice brunch (breakfast and lunch) for all of us this morning.
Fruit salad: 1 banana, 1 mango, 1 orange, 1 apple, 1 kiwi and a little fresh lemon juice
Spinach salad: fresh spinach, 1 avocado, 1 tomato, 10 green olives (low sodium and washed extensively), fresh mushrooms, garlic, reduced fat parmesan cheese, 8 unsalted crackers crumbled over it. Dressing 1/2 oil and vinegar, 1/2 nonfat Italian.
Potato gratin: 4 russet potatoes sliced thinly, 2 cups of 2% milk, 1 cup of low fat Mexican cheese, sliced mushrooms, sliced green onion bottoms, sliced onion, 1/2 cup of cilantro. Cooked open for 1 hour at 350.
Salmon with toast: 4 oz cooked at 50% for 2 min. covered with lemon juice, chopped green onion tops, reduced fat mayonnaise, and 2 slices of toast cut up into a total of 8 pieces.
Eggs: Egg white cooked for 3 min. in microwave, then 4 little “yolks” made with Mexican cheese and melted for 30 sec on top of the cooked whites.
Juice: Sugarfree (antioxidant A,C and E supplemented) Tropical juice and unsweetened Grape juice.
Coffee and Tea: Decaf and Regular.
It was brunch for 5, as there was almost enough for a 5th plate.
We discussed having a contest to see who could get the lawn mower started the fastest, everyone getting a 5 min. turn. I had changed the plug yesterday and it still wasn’t starting. Today, however, after brunch, it started on almost the first pull, and we took turns mowing a bit.
